Ingredients
  

  • 4 large orange bell peppers
  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 cup cooked rice white or brown
  • 1 cup tomato sauce or marinara
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: shredded mozzarella or cheddar cheese for topping

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off bell peppers and remove seeds.
  3. Use a small knife to carve jack-o’-lantern faces into each pepper.
  4. In a skillet, heat olive oil and cook beef until browned.
  5. Add onion and garlic; cook 3–4 minutes until softened.
  6. Stir in cooked rice, tomato sauce, seasoning, salt, and pepper. Simmer 5 minutes.
  7. Spoon mixture into hollowed peppers. Top with cheese if using.
  8. Place peppers upright in a baking dish with ¼ inch water at the bottom.
  9. Cover loosely with foil and bake for 30–35 minutes until peppers are tender.
  10. Uncover and bake 5 more minutes for melted cheese. Serve warm.
