These Monster Turkey Meatball Subs are creepy, cheesy, and deliciously messy—just the way Halloween dinner should be! Made with tender turkey meatballs simmered in marinara and stuffed into hoagie rolls with melty mozzarella, these spooky subs are a crowd-pleaser for kids and grown-ups alike.
I created these monster subs for a Halloween movie night, and they’ve become a yearly tradition ever since. With olive “eyeballs,” melty cheese “teeth,” and saucy grins, they’re as fun to decorate as they are to eat. Even picky eaters devour them without a second thought!
Using lean ground turkey keeps things lighter without sacrificing flavor, and you can prep the meatballs ahead to make party night easy. Serve these with fries, salad, or even eyeball truffle pops for a themed meal that’s festive but stress-free.
Whether you’re hosting a haunted house dinner or just want something more fun than pizza, these meatball subs are a monstrous hit.
