Ingredients
  

  • 1 lb pizza dough
  • 1 cup diced butternut squash
  • 1 small red onion thinly sliced
  • 1 cup chopped kale
  • tbsp olive oil
  • 1 tsp balsamic vinegar optional
  • 1 cup shredded mozzarella
  • Optional: goat cheese crushed red pepper, balsamic glaze

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss squash with ½ tbsp olive oil, season, and roast for 20 minutes.
  3. Caramelize onions in ½ tbsp olive oil over medium heat for 12–15 minutes.
  4. Massage kale with remaining olive oil until slightly softened.
