  • 8 oz pasta penne, rigatoni, or fusilli
  • 1 cup jarred Alfredo or tomato sauce
  • ¾ cup canned pumpkin puree
  • 1 garlic clove minced (optional)
  • 1 tbsp olive oil or butter
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch of nutmeg optional
  • ¼ cup grated Parmesan plus extra for topping
  • Optional: chopped sage spinach, or red pepper flakes

Method
 

  1. Cook pasta according to package directions. Drain and reserve ¼ cup pasta water.
  2. In a skillet, heat olive oil or butter. Sauté garlic (if using) for 1 minute.
  3. Add jarred sauce and pumpkin puree. Stir until smooth.
  4. Season with salt, pepper, and nutmeg. Simmer 3–5 minutes.
  5. Stir in Parmesan and a splash of pasta water for desired consistency.
