Ingredients
  

  • Crust:
  • ¾ cup graham cracker crumbs
  • 2 tbsp brown sugar
  • 3 tbsp melted butter
  • Filling:
  • 8 oz cream cheese softened
  • ½ cup canned pumpkin puree
  • ¼ cup granulated sugar
  • 1 egg
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • Pinch of salt
  • Optional Toppings:
  • Whipped cream
  • Crushed pecans
  • Cinnamon dust

Method
 

  1. Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
  2. Mix graham crumbs, brown sugar, and butter. Press 1 tbsp into each liner.
  3. Bake crusts for 5 minutes. Let cool slightly.
  4. Beat cream cheese until smooth. Add pumpkin, sugar, egg, vanilla, and spices. Mix until creamy.
  5. Spoon filling into each crust (about ¾ full).
  6. Bake 18–20 minutes or until centers are set.
  7. Cool completely, then chill in fridge at least 2 hours.
  8. Top with whipped cream and serve.
