Ingredients
  

  • 2 cups cooked risotto chilled
  • ½ cup pumpkin purée
  • ½ cup grated Parmesan cheese
  • 1 tsp chopped sage
  • Salt and pepper to taste
  • 12 small mozzarella cubes
  • 1 cup flour
  • 2 eggs beaten
  • cups breadcrumbs
  • Oil for frying

Method
 

  1. In a bowl, mix risotto, pumpkin, Parmesan, sage, salt, and pepper.
  2. Take 2 tablespoons of the mixture and flatten in your palm.
  3. Place a mozzarella cube in the center and shape into a ball, sealing the cheese inside.
  4. Repeat with remaining mixture.
  5. Roll each ball in flour, dip in egg, then coat in breadcrumbs.
  6. Heat oil in a deep pan to 350°F (175°C).
  7. Fry arancini in batches until golden brown (2–3 minutes).
  8. Drain on paper towels and serve warm.
