Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs or breasts
  • 3 medium carrots sliced
  • 3 celery stalks sliced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 lb baby potatoes halved
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp cornstarch + 2 tbsp water optional for thickening
  • Fresh parsley for garnish

Method
 

  1. Add chicken, carrots, celery, onion, garlic, and potatoes to slow cooker.
  2. In a bowl, mix broth, tomato paste, thyme, rosemary, salt, and pepper. Pour over ingredients.
  3. Add bay leaf. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Remove chicken, shred with forks, and return to pot.
  5. For thicker stew, mix cornstarch and water, stir in, and cook 15 minutes longer.
  6. Discard bay leaf. Garnish with parsley before serving.
