Ingredients
  

  • 2 lbs sirloin or flank steak thinly sliced
  • 2 bell peppers any color, sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • ½ cup low-sodium soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch + 2 tbsp cold water
  • 1 tsp ground ginger
  • ½ tsp black pepper
  • 1 cup beef broth
  • 2 tbsp olive oil
  • Optional: green onions & sesame seeds for garnish
  • Cooked rice for serving

Method
 

  1. In a skillet, heat olive oil over medium-high. Sear beef for 1–2 minutes (optional for extra flavor).
  2. Add beef, bell peppers, onion, garlic, soy sauce, brown sugar, ginger, and beef broth to crockpot. Stir well.
  3. Cook on LOW for 6 hours or HIGH for 3–4 hours.
  4. Mix cornstarch with cold water. Stir into crockpot during last 30 minutes to thicken sauce.
  5. Serve hot over rice and garnish if desired.
