Ingredients
  

  • 2 lbs beef stew meat cut into chunks
  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 garlic cloves minced
  • 3 carrots sliced
  • 2 parsnips sliced (or more carrots)
  • 2 potatoes cubed
  • 3 tbsp tomato paste
  • ½ cup red wine or beef broth
  • 4 cups beef broth
  • 1 tsp dried rosemary
  • ½ tsp thyme
  • 1 bay leaf
  • Salt & pepper to taste
  • Optional: 4–6 small round bread loaves hollowed out for bowls
  • Fresh parsley for garnish

Method
 

  1. In a large pot or Dutch oven, heat olive oil. Brown the beef in batches. Set aside.
  2. In the same pot, sauté onion and garlic until fragrant.
  3. Stir in tomato paste and cook for 1 minute. Deglaze with wine.
  4. Return beef to pot with all vegetables, herbs, broth, and seasonings.
  5. Bring to a boil, then reduce heat and simmer 2–2½ hours until beef is tender.
  6. Season to taste.
  7. Serve stew inside hollowed-out bread bowls. Garnish with parsley.
