Ingredients
  

  • 2 tbsp olive oil
  • 2 lbs beef stew meat cut into 1-inch cubes
  • Salt and pepper
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 3 large carrots sliced
  • 3 medium potatoes cubed
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tbsp Worcestershire sauce
  • Optional: 1 tbsp flour for thickening
  • 4 –6 crusty round bread bowls hollowed out

Method
 

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Season beef with salt and pepper, brown in batches, then set aside.
  2. In the same pot, sauté onions and garlic for 3 minutes.
  3. Stir in tomato paste and cook 1 minute.
  4. Add beef back in with carrots, potatoes, broth, Worcestershire, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until beef is tender.
  6. If desired, stir in flour to thicken during the last 10 minutes.
  7. Hollow out bread bowls and toast lightly if desired.
