Instructions
- Place cleaned chitterlings in a large pot and cover with water.
- Add onion, garlic, bay leaves, and vinegar to the pot.
- Season with salt, pepper, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer for 3-4 hours, stirring occasionally.
- Serve hot with cornbread or greens.
