Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 1 28 oz can whole peeled tomatoes
  • 2 tbsp tomato paste
  • 1 cup vegetable broth
  • 2 oz cream cheese or heavy cream
  • Salt & pepper to taste
  • Cobweb Crema:
  • ¼ cup sour cream
  • 1 –2 tbsp milk or water to thin

Method
 

  1. Heat olive oil in a pot over medium heat. Add onion and cook until translucent.
  2. Stir in garlic; cook 1 minute. Add tomato paste and cook for another minute.
  3. Add canned tomatoes and broth. Bring to a boil, then reduce heat and simmer 15 minutes.
  4. Add cream cheese and blend soup using an immersion blender until smooth and creamy. Season with salt and pepper.
  5. In a small bowl, whisk sour cream with milk until thin enough to drizzle.
  6. Ladle soup into bowls. Drizzle sour cream in a spiral, then drag a toothpick through to create a cobweb pattern.
