This Crock Pot Pepper Steak is the perfect set-it-and-forget-it dinner that tastes like your favorite Chinese takeout—only healthier and homemade. Tender strips of beef simmer in a savory garlic-soy sauce with sweet bell peppers and onions, all while you go about your day.
The first time I tried this in the crockpot, I was hooked. No tough meat, no standing over the stove—just bold flavor and juicy beef that practically melts in your mouth. The sauce is rich and balanced, soaking into the veggies and perfect over a bowl of fluffy rice.
You can use sirloin, flank steak, or round steak—whatever you have on hand. Bell peppers give it that signature color and sweetness, and a little cornstarch slurry at the end makes the sauce luxuriously thick.
It’s a comforting, flavorful dish you can prep in 10 minutes and enjoy hours later. Whether for meal prep, weeknight dinners, or feeding a hungry family, this slow cooker pepper steak is always a hit.
