Ingredients
  

  • For the meatballs:
  • 1 lb ground turkey
  • 1 egg
  • ¼ cup breadcrumbs
  • 2 garlic cloves minced
  • ¼ cup grated parmesan
  • 1 tsp Italian seasoning
  • Salt and pepper
  • For the subs:
  • 1 cup marinara sauce
  • 4 hoagie rolls or sub buns
  • 1 cup shredded mozzarella or sliced cheese
  • Olive slices toothpicks, bell pepper strips (for monster faces)

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
  2. In a bowl, mix turkey, egg, breadcrumbs, garlic, parmesan, seasoning, salt, and pepper.
  3. Form into 12 meatballs. Bake for 20 minutes or until cooked through.
  4. Warm marinara sauce in a pan and add cooked meatballs to coat.
  5. Slice hoagie rolls and fill with meatballs and sauce.
  6. Top with shredded or sliced mozzarella. Broil for 2–3 minutes until cheese melts.
  7. Decorate with olive “eyes” on toothpicks and bell pepper “tongues” for monster faces.
  8. Serve warm and spooky!
