Ingredients
  

  • 2 cups diced pumpkin or butternut squash
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup quinoa uncooked
  • 2 cups baby spinach or arugula
  • ¼ cup dried cranberries
  • ¼ cup toasted pumpkin seeds
  • Optional: crumbled feta or goat cheese
  • Maple Dijon Dressing:
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss pumpkin with olive oil, salt, and pepper. Roast for 25 minutes until tender and golden.
  3. Cook quinoa according to package directions. Fluff with fork and let cool.
  4. In a large bowl, combine greens, quinoa, roasted pumpkin, cranberries, and pumpkin seeds.
  5. In a jar, whisk or shake together dressing ingredients.
