  • 16 whole button or cremini mushrooms stems removed
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • ½ cup breadcrumbs
  • ¼ cup Parmesan cheese grated
  • 4 oz cream cheese softened
  • 2 tbsp fresh parsley chopped
  • Salt and black pepper to taste
  • 8 olive slices for “eyeball” look
  • 2 tbsp sour cream optional, for decoration

Method
 

  1. Preheat oven to 375°F. Line a baking sheet with parchment.
  2. Clean mushrooms and remove stems.
  3. Heat olive oil in a skillet, sauté garlic until fragrant. Add breadcrumbs and toast lightly.
  4. In a bowl, mix toasted breadcrumbs with Parmesan, cream cheese, parsley, salt, and pepper.
